RevPASH

Revenue per available seat hour. The honest measure of how hard the dining room actually works.

RevPASH divides revenue by seat-hours: seats multiplied by the hours you were open to sell them. Unlike average check or turns alone, it exposes the hours where a full-cost dining room sits half-lit and half-staffed. It is the restaurant cousin of the hotel industry's RevPAR discipline.

RevPASH = revenue ÷ (seats × opening hours)

Compute per daypart to see which hours earn their overhead and which merely burn it.

Illustrative: 50 seats open for 6 hours is 300 seat-hours, and AED 9,000 of revenue across them is a RevPASH of AED 30. Split it and the 3 to 6 pm block (150 seat-hours) runs at AED 10 while the evening (150 seat-hours) runs at AED 50; the fix is a daypart offer or shorter afternoon hours, not a bigger menu.
