What a service actually produces: covers, mix, yield, labour minutes — and how an operating manager reads them the next morning.

The pass and the P&L

Running quality, timing and recovery at the pass while knowing what each decision does to the month.

Food cost discipline

Purchasing, receiving, yield, portioning and the weekly count — the habits that hold a target without theatre.

The shift as a system

Prep lists, station handoffs, escalation and the daily review — a shift a team can repeat without the founder in the room.

People under pressure

Briefing, correcting and holding standards mid-service — leadership at station level, not in a slide deck.

The weekly operating review

The 20-minute P&L habit: one page, the four cost lines, one action — the discipline the whole programme installs.

Dates are announced when the waitlist reaches eight; pricing is announced with the dates — the waitlist hears first, and nothing is announced before it is real. The four consulting doors are unchanged; the School teaches the same operating method GGB installs in engagements.
