I am Dayaparan. 28 years, 45-plus restaurant concepts across the UAE, Oman, India and Singapore.
Here's what those years taught me: restaurants rarely fail because the food is bad. They fail because the numbers were never right before the doors opened.
So that's what I do. I make the numbers right. Before the lease is signed — or after the trouble starts.
