How to use it — three steps

  1. Complete the employer set-up first: the legal employer, the emirate, approved policies, the local contacts table and the Q&A’s manager fields (platform, training lead, paid training slots, assessment standard, device access). GGB is the publisher, not the employer.
  2. Print or share one checklist per employee. Work through the four stages in order, marking Done, Pending or N/A with initials, date and the reason for any N/A; record the practical assessments and the five-shift coaching notes as they happen.
  3. Make the completion decision — ready, supervised only, or further training — sign it off, store the record in the approved HR location, and issue the Q&A to the team with the employer approval line completed.

A new line cook joins a Dubai café

Before the first shift HR confirms the legal employer and contract, the residency and medical steps that apply, and explains salary and the payroll date in AED. On day one the manager runs the welcome and safety block; the food-safety PIC explains hygiene, illness reporting and allergen escalation and verifies the training and health clearances the outlet requires.

In the role-training block the cook is assessed on station set-up and approved recipes, receiving and date labels, cleaning and safe shutdown, and safe lifting and PPE — each marked ready or retrain by a named assessor, with the five-shift record filled by the buddy.

Only when the manager has observed the practical skills does the completion decision move to “ready for assigned duties”. Completing the online modules alone does not authorise unsupervised work, and food-handler approvals and work authorisation are separate requirements.

This is a template demonstration, not a client record. The names, roles and outcomes are illustrative.

Common mistakes

  • Issuing the checklist before the employer set-up is done — the jurisdiction, approved policies and local contacts have to be real before the first tick.
  • Attaching passport copies, bank details or medical reports to the form; they belong in the restricted HR file.
  • Treating online module completion as authorisation. The practical sign-off is the authorisation.
  • Assuming compulsory training is done unpaid at home — the manager confirms how required training time is recorded and paid.
  • Copying the Q&A unedited: the platform, training lead, slots and support routes on page 1 are yours to complete, and the template does not imply that GGB provides a learning platform.

What it does not do

  • It is an operating template, not an employment contract or a legal opinion. HR must align it with the employer’s jurisdiction and approved policies; DIFC and ADGM have separate employment regimes.
  • Emirate-specific food-safety training and health-clearance requirements are confirmed with the relevant authority for your outlet.
  • No Arabic version is included; any translation needs native review before it is issued.

Questions

Who pays recruitment and employment fees?
The Q&A follows MOHRE guidance, which places recruitment and employment costs on the employer, and tells the team member to raise any request to pay such fees with HR through the confidential channel — confirming the applicable authority for the employer.
What is the “PIC”?
The food-safety person in charge for the outlet. The checklist gives the PIC the hygiene, allergen and health-clearance items, with Dubai Municipality’s food-establishment guidance as the reference.
How does Ramadan affect training?
The manager publishes the roster and training slots in UAE time (GST, UTC+4), applying the rules relevant to the employer, and plans training within the applicable working-time arrangements.
Can I use the checklist for an opening team?
