Development service · the people workstream

Service quality is a system wearing a uniform.

Venues do not have "people problems" — they have missing people systems: manpower plans built after the roster hurts, training that lives in one manager’s head, standards nobody can evaluate. GGB builds the people machinery: recruitment architecture, training systems and evaluation discipline that survive turnover.

The risk of hiring as improvisation

Opening rosters assembled in a rush become permanent payroll. Training by shadowing breeds drift within a quarter. When standards are unwritten, every departure exports them. The people system is either built once, or improvised forever.

  • Manpower cost fixed by panic-hiring at opening
  • Service standards that leave with each resignation
  • Evaluation by mood instead of matrix
  • Training time spent, competence never verified
01

Manpower architecture

Roles, ratios and rosters modelled from the format and volume — the people cost engineered like every other cost.

02

Recruitment system

Job descriptions, sourcing standards, structured interviews and onboarding sequence — hiring as a repeatable process.

03

Training manuals & programmes

Role-based manuals and structured programmes: the standard written down, taught, and testable.

04

Role-to-competency matrix

Who must be able to do what, verified how, by when — the training map on one page.

05

Evaluation tools

Assessment instruments that make competence visible and progression honest.

  1. 01

    Cost before roster

Manpower is modelled against revenue bands before a single offer letter.

  2. 02

    Write the standard

If it is not written, it is not a standard — manuals before shadowing.

  3. 03

    Verify competence

Training ends at demonstrated ability, not attendance.

  4. 04

    Evaluate on rhythm

A cadence of structured evaluation replaces annual improvisation.

The people discipline has a paper trail thirteen years long:

Restaurant training manual — chapter architecture

The nine chapters

  • 1 · Manager training — orientation, position training, management training; GM and associate-manager job descriptions
  • 2 · Restaurant operations — purchasing/receiving/storage, food production, beverage production, inventory, cash management, scheduling & shift planning, opening/shift-change/closing procedures
  • 3 · Sanitation & safety — health-inspection process, flow of food, HACCP program, restaurant safety plan
  • 4 · Exceptional service — customer relations, complaint prevention and handling
  • 5 · Marketing — promotions, local-store marketing, the ongoing plan
  • 6 · Managing prime costs — food cost controls, labour cost controls
  • 7 · Financial reports — the restaurant P&L, the prime-cost report
  • 8 · Managing employees — administration, performance evaluation, employee relations
  • 9 · Employee selection — recruitment as a system

The design law inside it

  • Every chapter closes with forms and checklists — training that lands as instruments, not advice
  • Prime-cost discipline is a TRAINING chapter — cost control taught to managers before the venue opens
