HACCP is not a certificate bolted on at opening — it is the geometry of the kitchen itself: receiving, storage, preparation, cooking, pass, wash and waste arranged so contamination has no shortcut and labour has no wasted steps. GGB plans kitchens as that diagram, then coordinates the engineering that builds it.
When the kitchen is what remained after the dining room was drawn, the venue inherits crossing flows, under-sized extraction, chillers beside fryers, and a HACCP audit that becomes an annual improvisation. Rework after tiling costs multiples; rework after opening costs customers.
