The number of guests served in a period. The volume side of every revenue equation in the building.
A cover is one guest served; covers are the raw volume metric of a restaurant. Revenue is covers multiplied by average check, which is why every serious forecast, roster and feasibility model starts from a covers assumption. Counting covers honestly, by daypart, is the difference between a plan and a wish.
Illustrative: an 80-seat room serves 120 guests at dinner, which is 120 covers and 1.5 turns of the room. At an AED 75 average check that service produced AED 9,000, and every projection in the feasibility model hangs off those two inputs.
