Revenue divided by covers. The spend a typical guest actually leaves behind.
Average check is total revenue divided by covers for the same period. It is the price side of the revenue equation and the fastest lens on menu pricing, upselling and mix. Track it by daypart and channel; a healthy dinner average can hide a lunch that no longer covers its own labour.
Average check = revenue ÷ covers
Use net revenue and guest count from the same daypart or period, per channel where possible.
Illustrative: AED 18,000 of dinner revenue over 240 covers is an AED 75 average check. If the team lifts it to AED 80 through pairing and dessert prompts, the same 240 covers produce AED 19,200, an extra AED 1,200 with zero extra rent.
