Menu engineering
Reworking menu mix, pricing and placement so the items that earn the most sell the most.
Menu engineering classifies every item on two axes: how much contribution it earns and how well it sells. High-margin high-sellers get protected and promoted; popular items with weak margin get re-costed or re-priced; poor performers get reworked or removed. Done quarterly, it is one of the highest-leverage exercises in the building because it moves profit without adding a single cover.
Illustrative: two items each sell 500 plates a month. Item A contributes AED 42 a plate (AED 21,000); item B contributes AED 28 (AED 14,000). Lifting B by AED 5 through a recipe re-cost or a price nudge adds AED 2,500 a month from the same sales volume.
