A delivery-only production unit with no dining room. Lower capex in, aggregator economics out.
A cloud kitchen produces delivery orders only: no dining room, no front of house, a smaller footprint and a much lighter fit-out. What it saves in capex and rent it hands back partly through commissions, packaging and paid visibility on the platforms it depends on. The model rewards operators who treat it as manufacturing, with a P&L per brand, per platform.
Illustrative: a unit doing 60 orders a day at an AED 50 average is AED 3,000 a day. At a 25% commission the platforms take AED 750 a day, so AED 2,250 remains to carry food, packaging, labour and rent. The build may cost a fraction of a dine-in venue, but every order arrives with the commission already taken.
