SOP (standard operating procedure)
A written standard for how a task is done, so the result stops depending on who is on shift.
An SOP fixes the one agreed way a task is performed: recipe, portion, sequence, standard and check. It converts personal knowledge into an operating asset the business owns, which is what makes training faster, quality consistent and a second site possible. A restaurant that lives in one chef's head is a job; documented, it is a company.
Illustrative: the SOP fixes a portion at 180 g but a cook free-pours 200 g, giving away 20 g a plate. Over 500 plates a week that is 10 kg of product served without revenue, and the SOP plus a scale on the line is the whole fix.
