P&L (profit and loss statement)

The periodic statement of revenue, costs and profit. The scoreboard a disciplined operator reads line by line.

The P&L states revenue, then subtracts cost of goods, labour and operating expenses to arrive at profit for the period. Read monthly at minimum, with every line expressed as a percentage of revenue, it turns argument into arithmetic. A restaurant that cannot produce a clean monthly P&L is not being run; it is being watched.

Illustrative monthly P&L: revenue AED 200,000; COGS AED 60,000 (30%); labour AED 54,000 (27%); other operating costs including rent and utilities AED 66,000 (33%). Operating profit is AED 20,000, which is 10% of revenue, and every line has a band it answers to.
